Dipping Sauce (Nam Jhim)

Ingredients:
  • 3 grams Thai red chilies, finely chopped
  • 20 grams garlic, peeled, chopped
  • 100 grams sugar
  • 5 grams salt, fine
  • 60 milliliters vinegar, rice (unseasoned)
Method:
  1. Combine vinegar, chillies, garlic, salt and sugar in blender.
  2. Blend until fine.
  3. Place in a small saucepan and bring to a boil over low heat and reduce heat.
  4. Simmer 15 minutes to syrup consistency.
  5. Cool and serve.
