Instant Flour

Instant flour, like Wondra-brand flour, is a low protein, finely ground wheat flour that has been processed to dissolve easily in water. The process is called pre-gelatinization, and it involves heating a starch (flour) with very hot water and/or steam, then drying it out, so that it has essentially been cooked. Because of this, instant flours are unlikely to form lumps when mixed with a liquids.  The anti-clumping properties of instant flour makes an excellent light breading for fried/sautéed items and for prepping baking pans for batters. Wondra-brand instant flour also has some malted barley flour mixed into it, which acts as a dough conditioner in many breads and aids in browning and caramelization.
