Ingredients
  • a/n olive oil blend
  • 1fillets salmon fillets4-6 ounce, skin on, scaled and scored
  • a/nteaspoons coarse salt
  • a/n black pepper
  • a/n sugar
  • 1teaspoon butter
  • 2ounces spinach

Instructions
  1. Preheat small sauté pan and add about 1 teaspoon of the olive oil. Season the fillet on both sides with salt and pepper. On the skin side, sprinkle evenly with some sugar.
  2. Place the salmon in the pan, skin side down, and cook until it is nicely browned and caramelized, about 3 minutes. Flip over and cook on the other side for 1 to 1 1/2 minutes. Remove the salmon and hold warm.
  3. Add some olive oil and butter to the pan and once the butter is melted, add the spinach and season with salt and pepper. Cook the spinach until wilted, 3 to 4 minutes.
  4. Serve the salmon by adding the spinach to a warmed entree plate, place a piece of salmon on top of the spinach.
