Vinaigrette
Ingredients
- 2ounces white wine vinegaror red wine vinegar
- 1/2teaspoon Dijon mustard
- 1/2small shallotminced
- 4ounces canola oilor another neutral oil
- 1/2teaspoon sugarmore as needed
- a/n fine salt
- a/n black pepper
- 1teaspoon chives, parsley, and/or tarragon, minced
Yield:
Instructions
- Combine the vinegar, mustard, and shallots.
- Gradually whisk in the oil.
- Adjust seasoning with sugar, salt, and pepper.
- Add the fresh herbs if desired.
