Ingredients
  • 2ounces white wine vinegaror red wine vinegar
  • 1/2teaspoon Dijon mustard
  • 1/2small shallotminced
  • 4ounces canola oilor another neutral oil
  • 1/2teaspoon sugarmore as needed
  • a/n fine salt
  • a/n black pepper
  • 1teaspoon chives, parsley, and/or tarragon, minced

Instructions
  1. Combine the vinegar, mustard, and shallots.
  2. Gradually whisk in the oil.
  3. Adjust seasoning with sugar, salt, and pepper.
  4. Add the fresh herbs if desired.
