Ingredients
  • 1large egg yolk
  • 1teaspoon white wine vinegar
  • 1/2teaspoons water
  • 1/2teaspoon Dijon mustard
  • 8ounces canola oil
  • 1/2teaspoon fine salt
  • a/n sugar
  • a/n white pepper
  • 2teaspoons lemon juice

Instructions
  1. Combine the yolks, vinegar, water, and mustard in a bowl.
  2. Mix well with a ballon whisk until the mixture is slightly foamy.
  3. Gradually add the oil in a thin stream, constantly whisking, until the oil is incorporated and the mayonnaise is smooth and thick.
  4. Adjust the flavor with salt, sugar, pepper, and lemon juice to taste.
  5. Hold refrigerated.
