Mixed Green Salad
Ingredients
- 1/2ounce red onions
- 1ounce red wine vinegar
- 3ounces mixed salad greensabout 1 cup
- 3each cherry tomatoeshalved
- 1/2small radish3-5 very thin slices
- a/n fine salt
- a/n black pepper
- 1ounce vinaigrette

Instructions
- Cut the onion into a very fine julienne and soak in some red wine vinegar for 30 minutes.
- As needed, rinse, trim, and dry the greens and cut or tear into bite-sized pieces.
- Mix the greens and keep them well chilled until ready for service.
- Place the lettuce in a mixing bowl and season with fine salt and finely-ground black pepper.
- Add vinaigrette to the sides of the bowl and toss the greens into the vinaigrette. Initially, under dress the greens.
- Carefully, and without compressing the greens, place the greens on a chilled plate. Try to achieve maximize height when plating.
- Finish with a drizzle of vinaigrette and serve.
