Ingredients
  • 1bottle Red WineCabernet Sauvignon or Syrah
  • 5ounces sugar
  • 1each cinnamon stick
  • 1teaspoon ground mace
  • 1each clove
  • 1/4teaspoon allspice
  • 1/8teaspoon ground nutmeg
  • 4each red Anjou Pears

Instructions
  1. Prepare a 176˚F/80˚C water bath.
  2. Simmer the ingredients until the liquid is reduced to 1/5 its original weight. Strain.
  3. Fill a container with water. Peel pears, submerging each fruit in the water once skin is removed so that they do not brown.
  4. Place each pear into a sous vide bag. Add about 2 tablespoons of poaching liquid to each bag. Seal the bags.
  5. Cook 30 minutes or until soft when squeezed. Chill.
  6. Remove the pears from the bags and reserve the poaching liquid.
  7. Add the poaching liquid to a small pan and reduce to syrup consistence.
  8. Slice the pears and serve with the reduced poaching liquid.
