The Perfect French Fry
Ingredients
- 4each russet potatoeswashed
- 2 1/4ounces white vinegar
- 1gallon water
- a/n fine salt

Instructions
- Preheat a deep-fryer to 360˚F.
- Cut the potatoes (use a mandolin) into 1/4" bâtonnets.
- Combine the water and vinegar in a large pot and bring to a boil.
- Blanch the potatoes 10 minutes in the boiling water and vinegar.
- Fry the blanched potatoes for 50 seconds at 360℉ in a deep-fryer.
- Place the potatoes on a wire rack placed on a sheet pan and freeze the potatoes. Hold for service frozen.
At Service:
- Fry the potatoes at 360˚F for 3 1/2 minutes.
- Drain, season and serve immediately.
