Ingredients
  • 1tablespoon vegetable oil
  • 1tablespoon butter
  • 4ounces cremini mushroomstrimmed and halved
  • 2ounces shiitake mushroomsstemmed and sliced 1/2 inch thick
  • a/n coarse salt
  • a/n black pepper
  • a/n thymefresh
  • 1teaspoon shallotminced
  • 1/2teaspoon garlicminced
  • 1tablespoon water

Instructions
  1. Heat the oil in a medium sauté pan over medium heat and add the butter.
  2. Increase the heat to high and add the Cremini mushrooms and a pinch of salt. Sauté the Creminis for 3 to 5 minutes until starting to brown. Next add the Shiitake mushrooms and saute with the Cremini's until well browned, another 2 to 3 minutes.
  3. Add the shallot and sauté until softened.
  4. Add the thyme and the garlic and sauté until fragrant.
  5. De-glaze the pan with the 1 tablespoon of water if needed and cook until the water has evaporated.
  6. Season with salt and pepper and serve.
