Cucumber and Arugula Tea Sandwiches
Ingredients
- 1each seedless cucumber
- 4ounces cream cheesesoftened
- 2ounces goat cheesesoftened
- 1/2ounce arugulacoarsely chopped
- 4slices thin-sliced white bread
- a/n chiveschopped, for garnish

Instructions
- Using a mandoline, slice the cucumber, length-wise 1/16-inch thick .
- Lay slices on a paper towel to absorb excess moisture, and set aside.
- Combine the cream cheese and goat cheese in a small bowl and blend until smooth.
- Fold in the arugula.
- Spread a thin layer of the cheese mixture on each slice of bread.
- Arrange cucumbers in a single layer on 2 of the slices.
- Place remaining 2 bread slices over the cucumber, cheese-mixture side down.
- Using a serrated knife, carefully trim off and discard the crusts.
- Slice each sandwich in half diagonally and then in half again; each large sandwich makes 4 triangular tea sandwiches.
Recipe Notes
All sandwich bread should be trimmed of crust. Cut sandwiches into a variety of straight-sided shapes including rectangles, squares and triangles.
