Ingredients
  • 1each seedless cucumber
  • 4ounces cream cheesesoftened
  • 2ounces goat cheesesoftened
  • 1/2ounce arugulacoarsely chopped
  • 4slices thin-sliced white bread
  • a/n chiveschopped, for garnish

Instructions
  1. Using a mandoline, slice the cucumber, length-wise 1/16-inch thick .
  2. Lay slices on a paper towel to absorb excess moisture, and set aside.
  3. Combine the cream cheese and goat cheese in a small bowl and blend until smooth.
  4. Fold in the arugula.
  5. Spread a thin layer of the cheese mixture on each slice of bread.
  6. Arrange cucumbers in a single layer on 2 of the slices.
  7. Place remaining 2 bread slices over the cucumber, cheese-mixture side down.
  8. Using a serrated knife, carefully trim off and discard the crusts.
  9. Slice each sandwich in half diagonally and then in half again; each large sandwich makes 4 triangular tea sandwiches.
Recipe Notes

All sandwich bread should be trimmed of crust. Cut sandwiches into a variety of straight-sided shapes including rectangles, squares and triangles.
