Cuban Pork Roast
Ingredients
  • 1pound boneless pork shoulder
  • a/n coarse salt
  • a/n black pepper
  • 1tablespoon ground cumin
  • 1tablespoon dried oregano
  • 2tablespoons extra-virgin olive oil
  • 4cloves garlicpeeled and lightly crushed
  • 1/4teaspoon dried red chili flakes
  • 1medium onionsliced
  • 1cup orange juice
  • 1each limejuiced
  • 1cup chicken stock
  • 2each bay leaves

Instructions
  1. Tie the shoulder in 4 places with kitchen twine so it will hold its shape while being cooked.
  2. Season the pork with salt, pepper, cumin and oregano.
  3. Set the base of a pressure cooker over low-medium heat and add a 2 tablespoons of olive oil.
  4. Add garlic and chili flakes and as the oil heats up it will become fragrant and infuse the oil.
  5. Add the pork.
  6. Add onions around the pork and brown slightly before adding orange juice, lime juice, stock and bay leaves.
  7. Secure the lid of the pressure cooker and cook for 20 to 25 minutes.
  8. The pork should be tender when done. When done allow to cool in juices before removing twine and slicing.
