Marinara Sauce
Ingredients
- 1pound canned whole tomatoes
- 2ounces extra-virgin olive oil
- 7cloves garlicminced
- 1teaspoon coarse salt
- 1pinch crushed red pepper flakes
- 1cup water
- 2sprigs basil

Instructions
- Use an immersion blender to lightly puree tomatoes.
- In a large skillet (not a saucepan) over medium heat, heat the oil, add the garlic and cook until the garlic just begins to sizzle. Do not allow the garlic to brown.
- Add the tomatoes, water, salt, chili flakes, and basil (or oregano, if using).
- Simmer sauce until thickened and oil on surface is a deep orange, about 15 minutes. (If using oregano, taste sauce after 10 minutes of simmering, adding more salt and oregano as needed.)
- Discard basil (if using).
