Ingredients
  • 1tablespoon olive oil
  • 2tablespoons celerysmall dice
  • 2tablespoons onionssmall dice
  • 2tablespoons carrotssmall dice
  • 2tablespoons green bell peppersmall dice
  • 1cloves garlicminced
  • 3cups chicken stockor broth
  • 1/4cup canned tomatoessmall dice
  • 1/2cup cabbagesmall dice
  • 1/2teaspoon oregano
  • 1/2teaspoon basil
  • pinch red pepper flakes
  • as needed black pepper
  • as needed coarse salt

Instructions
  1. Heat olive oil in a medium pot over medium heat.
  2. Sweat celery, onions, carrots, and bell peppers.
  3. Add garlic, sauté another 30 seconds.
  4. Add chicken stock.
  5. Add tomatoes and cabbage.
  6. Bring to a boil and then reduce heat.
  7. Cook until cabbage is tender.
  8. Add oregano, basil, red pepper flakes, black pepper and salt.
  9. Adjust seasoning and consistency as needed.
  10. Serve.
