Ingredients
  • 1pound ground beef
  • 1small onionsmall dice
  • 1small green bell peppersmall dice
  • 5cloves garlicminced
  • 3tablespoons chili powder
  • 1tablespoon ground cumin
  • 1pounds canned diced tomatoes
  • 16ounces waterup to 32 ounces
  • 3tablespoons coarse saltmore as needed
  • 1tablespoon sugarmore as needed
  • 1/2tablespoon black pepper
  • 1/2pound canned red kidney beansrinsed

Instructions
  1. In a large saucepan, over medium-high heat brown the meat.
  2. Add the browned meat to a strainer set over bowl. Discard the fat.
  3. In the now empty pan, sweat the onion and green bell pepper, about 5 minutes.
  4. Add the garlic and cook about 15 seconds.
  5. Return the meat to the pan and add the chili powder and cumin and cook until fragrant, about 1-2 minutes.
  6. Add the tomatoes, water, salt, sugar and pepper and simmer over low heat for 45 minutes.
  7. Adjust seasoning as necessary.
  8. Add the beans and simmer another 15 minutes. Serve.
