Chili
Ingredients
- 1pound ground beef
- 1small onionsmall dice
- 1small green bell peppersmall dice
- 5cloves garlicminced
- 3tablespoons chili powder
- 1tablespoon ground cumin
- 1pounds canned diced tomatoes
- 16ounces waterup to 32 ounces
- 3tablespoons coarse saltmore as needed
- 1tablespoon sugarmore as needed
- 1/2tablespoon black pepper
- 1/2pound canned red kidney beansrinsed

Instructions
- In a large saucepan, over medium-high heat brown the meat.
- Add the browned meat to a strainer set over bowl. Discard the fat.
- In the now empty pan, sweat the onion and green bell pepper, about 5 minutes.
- Add the garlic and cook about 15 seconds.
- Return the meat to the pan and add the chili powder and cumin and cook until fragrant, about 1-2 minutes.
- Add the tomatoes, water, salt, sugar and pepper and simmer over low heat for 45 minutes.
- Adjust seasoning as necessary.
- Add the beans and simmer another 15 minutes. Serve.
