Mashed Potatoes
Ingredients
- 2pounds Yukon Gold potatoes(4-6 medium), cut into 1-inch chunks, rinsed well, and drained
- 4tablespoons buttercold
- a/n coarse salt
- 6ounces milkwarm

Instructions
- Place the potatoes in a pot with cold water
- Simmer potatoes until tender. Note: check them using a knife or fork.
- Rice the cooked potatoes into a large pot and, using a rubber spatula fold in the cold butter.
- Stir in enough warm milk to desired consistency.
- Season to taste with salt and pepper.
- Serve immediately or hold warm.
