Fudge Icing
Ingredients
Simple Syrup
- 31grams sugar
- 37mL water
- 20grams corn syrup
- 45grams cocoa powder
- 13grams vegetable oil
- 12grams vegetable shortening
- 40grams corn syrup
- 112grams buttersoftened
- 1teaspoons vanilla extract
- 450grams confectioners sugar
- 2tablespoons cold waterto 6 tablespoons, to adjust consistency

Instructions
- In a small pot on the stove, combine the first 3 ingredients to make the simple syrup.
- Boil for about 2-3 minutes then pour into a bowl and allow to sit in the freezer to rapid cool while you gather the other ingredients.
- In a large mixing bowl, add the cocoa powder and warm simple syrup and mix until it forms the fudge base.
- Add the vegetable oil and vegetable shortening and mix well.
- Add the corn syrup and the softened butter, mix smooth.
- Add the sifted confectioners sugar all at once and mix until smooth.
- Slowly add some of the cold water about 1 tablespoon at a time until you reach the desired consistency.
