Ingredients
  • 1each chicken breast bnls/sknlscut into cutlets or scalloping, 1/4-inch thick
  • a/n flour
  • a/n coarse salt
  • a/n black pepper
  • a/n oregano
  • a/n olive oil blend
  • a/n butter
  • 1/2cup cremini mushroomssliced
  • 1/4cup dry Marsala wine
  • 1tablespoon heavy cream

Instructions
  1. Combine flour, salt, pepper and oregano in a mixing bowl.
  2. Dredge chicken pieces in the flour, shaking off any excess.
  3. Heat oil in a skillet over medium heat.
  4. Cook chicken breast on medium heat for about 3 minutes on the first side, until lightly browned.
  5. Turn breast over to cook other side, then add mushrooms to skillet.
  6. Cook breast about 3 more minutes or until it reaches 165˚F internal temperature and both sides are lightly browned.
  7. Add dry Marsala wine around chicken.
  8. Cover and simmer for about 5 minutes.
  9. Remove chicken breast from pan and place in a serving plate.
  10. Turn off heat, stir butter until it is melted and an emulsion is made.
  11. Serve with pasta.
