Chicken Marsala
Ingredients
- 1each chicken breast bnls/sknlscut into cutlets or scalloping, 1/4-inch thick
- a/n flour
- a/n coarse salt
- a/n black pepper
- a/n oregano
- a/n olive oil blend
- a/n butter
- 1/2cup cremini mushroomssliced
- 1/4cup dry Marsala wine
- 1tablespoon heavy cream

Instructions
- Combine flour, salt, pepper and oregano in a mixing bowl.
- Dredge chicken pieces in the flour, shaking off any excess.
- Heat oil in a skillet over medium heat.
- Cook chicken breast on medium heat for about 3 minutes on the first side, until lightly browned.
- Turn breast over to cook other side, then add mushrooms to skillet.
- Cook breast about 3 more minutes or until it reaches 165˚F internal temperature and both sides are lightly browned.
- Add dry Marsala wine around chicken.
- Cover and simmer for about 5 minutes.
- Remove chicken breast from pan and place in a serving plate.
- Turn off heat, stir butter until it is melted and an emulsion is made.
- Serve with pasta.
