Ingredients
  • 2tablespoons vegetable oil
  • 1medium onionsmall dice
  • 3cloves garlicminced
  • 3tablespoons chili powder
  • 2teaspoons corianderground
  • 2teaspoons cuminground
  • 1teaspoon coarse saltcoarse
  • 2teaspoons sugar
  • 16ounces canned tomato sauce
  • 1/4cup water

Instructions
  1. In a medium sauce pan, heat the oil over medium-high heat.
  2. Add the onion and cook, stirring occasionally, until softened and beginning to brown, about 5 minutes.
  3. Add the garlic, chili powder, coriander, cumin, salt, and sugar; cook, stirring constantly, until fragrant, about 30 seconds.
  4. Add the tomato sauce and water and simmer for 15 minutes.
  5. Reserve sauce for braising chicken thighs.
