Red Chile Sauce (Chile Rojo Salsa)
Ingredients
- 2tablespoons vegetable oil
- 1medium onionsmall dice
- 3cloves garlicminced
- 3tablespoons chili powder
- 2teaspoons corianderground
- 2teaspoons cuminground
- 1teaspoon coarse saltcoarse
- 2teaspoons sugar
- 16ounces canned tomato sauce
- 1/4cup water

Instructions
- In a medium sauce pan, heat the oil over medium-high heat.
- Add the onion and cook, stirring occasionally, until softened and beginning to brown, about 5 minutes.
- Add the garlic, chili powder, coriander, cumin, salt, and sugar; cook, stirring constantly, until fragrant, about 30 seconds.
- Add the tomato sauce and water and simmer for 15 minutes.
- Reserve sauce for braising chicken thighs.
