Ingredients
  • 13-pound whole chicken
  • 10cups watercold
  • 3slices ginger
  • 2each green onionscut into 1-inch pieces
  • 1tablespoon Shaoxing rice wine
  • a/n coarse salt

Instructions
  1. Rinse the chicken under running water.
  2. Place in a large pot with 10 cups water (or just enough to cover).
  3. Add the ginger, green onion, and rice wine.
  4. Bring to a bare boil over medium heat and reduce heat to a gentle simmer, skimming off any foam that rises to the top.
  5. Cover, simmer for 1 hour.
  6. Remove the chicken, cool briefly and pull meat from carcass and reserve for another use.
  7. Strain the broth and use as needed.
