Ingredients
  • 1/2cup pineapple juice
  • 4tablespoons soy sauce
  • 4tablespoons brown sugar
  • 2teaspoon bourbon
  • 1/2teaspoon cracked black pepper
  • 1/4teaspoon garlic powder
  • 1cup vegetable oil
  • 46-ounce salmon filletsskinless
  • 4teaspoons chivesminced

Instructions
  1. Combine the pineapple juice, soy sauce, brown sugar, bourbon, pepper, and garlic powder in a medium bowl.
  2. Stir to dissolve the sugar.
  3. Add the oil.
  4. Place the fillets in a shallow dish and pour the bourbon marinade over them, reserving a little to brush on the fish as it cooks.
  5. Cover the fish and refrigerate for at least an hour.
  6. Preheat oven to 275 degrees and line a rimmed baking sheet with aluminum foil..
  7. Slow roast/bake the salmon 15 to 18 minutes or until the internal temperature reaches 130 degrees. ***Glaze the salmon with the reserved marinade a few times during cooking.
  8. Arrange the fillets on each plate with the chives sprinkled over the top.
