Sweet Bourbon Glazed Salmon
Ingredients
- 1/2cup pineapple juice
- 4tablespoons soy sauce
- 4tablespoons brown sugar
- 2teaspoon bourbon
- 1/2teaspoon cracked black pepper
- 1/4teaspoon garlic powder
- 1cup vegetable oil
- 46-ounce salmon filletsskinless
- 4teaspoons chivesminced

Instructions
- Combine the pineapple juice, soy sauce, brown sugar, bourbon, pepper, and garlic powder in a medium bowl.
- Stir to dissolve the sugar.
- Add the oil.
- Place the fillets in a shallow dish and pour the bourbon marinade over them, reserving a little to brush on the fish as it cooks.
- Cover the fish and refrigerate for at least an hour.
- Preheat oven to 275 degrees and line a rimmed baking sheet with aluminum foil..
- Slow roast/bake the salmon 15 to 18 minutes or until the internal temperature reaches 130 degrees. ***Glaze the salmon with the reserved marinade a few times during cooking.
- Arrange the fillets on each plate with the chives sprinkled over the top.
