Apricot Chutney
Ingredients
  • 2tablespoons distilled white vinegar
  • 2tablespoons red wine vinegar
  • 1/4cup sugar
  • 2tablespoons honey
  • 1/2small onionsminced
  • 11-inch piece gingergrated
  • 1/8teaspoon ground cloves
  • 1/2teaspoon coarse salt
  • 1/4teaspoon black pepper
  • 6ounces dried apricotsroughly chopped

Instructions
  1. In small saucepan over low heat, stir together 3/4 cup water, distilled and red wine vinegars, sugar, honey, onion, ginger, cloves, salt, and pepper.
  2. Simmer, uncovered, until onions are very soft, about 5 minutes.
  3. Add apricots and simmer, uncovered, until apricots are very soft and liquid is syrupy, about 40 minutes.
  4. Cool to room temperature before serving. (Chutney can be made ahead and refrigerated, covered, up to 2 days.)
