Ingredients
  • 3tablespoons coriander seeds
  • 3tablespoon cumin seeds
  • 11-inch-piece cinnamon stickcrushed
  • 8each cloves
  • 4each black cardamom pods
  • 1/ 2teaspoon fenugreek seedsoptional
  • 2tablespoon black peppercorns
  • 2each bay leaves

Instructions
  1. Place a frying pan over medium heat.
  2. Add the spices and dry fry for about 30 seconds.
  3. Be sure to move the spices around in the pan so that they roast evenly.
  4. Remove from the heat and grind to a fine powder in a spice grinder or mortar and pestle.
