French Fries
Ingredients
- 1each russet potatoe
- a/n coarse salt

Instructions
- Peel, rinse and dry the potatoes. (You may leave the skin on if you prefer)
- Cut each potato lengthwise into 4 or 5 slices 1/4 inch thick, then cut each piece into sticks 1/4 inch thick.
- Heat oil to 275˚F.
- Fry the potatoes about 4 to 5 minutes until soft.
- They should not be brown at all at this point.
- Drain them on paper towels.
- Once the potatoes have been fried at 275˚ F, turn up the heat until the oil temperature reaches 375˚F.
- Fry the potatoes until golden brown, remove drain and season with salt.
- Serve immediately.
