Tasso Cream
Ingredients
- 1tablespoon minced shallots
- 2tablespoons white wine
- pinch cayenne pepper
- 1/2cup chicken stock
- 1 1/2 tablespoons brunoise cut tasso ham
- 1teaspoon lemon zest
- 1/2 cup cream
- pinch salt
- pinch ground white pepper
- pinch brown sugar
- water as needed

Instructions
- add the shallots, wine, cayenne, chicken stock, ham, and lemon zest and reduce to 1/4 cup.
- add the cream, bring to a boil, and simmer until the sauce reaches a nappe consistency, about 4-5 minutes. If the sauce is too thin you may add a cornstarch slurry as needed.
- season with salt, white pepper, and a pinch of brown sugar. Hold hot, thinning with water if necessary.
