Ingredients
  • 4ea firm pearspeeled, stems intact
  • 1ea vanilla beansplit lengthwise and scraped
  • 1stick cinnamon
  • 1cup dry white wine
  • 1cup apple cider vinegar
  • 1cup sugar
  • 1quart wateror enough to cover pears
  • 1 1/2tablespoons fresh lemon juice
  • pinch kosher salt
  • 1scoop vanilla ice cream

Instructions
  1. Slice vanilla bean lengthwise and scrape inside. Combine the scraped vanilla and the pod, cinnamon, wine, vinegar, sugar, lemon juice, and salt in a medium saucepan over medium heat, stirring until sugar dissolves. Bring to a simmer. Add pears; add water if needed to completely submerge pears. Cover with lid slightly ajar and simmer, turning occasionally, until pears are tender but not mushy, about 30 minutes.
  2. Using a slotted spoon, transfer pears to a plate. Increase heat and boil poaching liquid until reduced to 1 cup and has a syrupy consistency.
  3. Spoon some of syrup over cold or room-temperature pears. Serve with a dollop of vanilla ice cream.
