Vegetable Minestrone
Ingredients
- 1 1/4quart water
- 2tablespoons olive oil
- 2cloves garlic, crushed
- 1/2cup white onionneat small dice
- 1/4cup white wine
- 1/4cup carrotsneat small dice
- 1/2cup roma tomatoneat small dice (seeded and membrane removed)
- 1/4cup celeryneat small dice
- 1/4cup yellow squashneat small dice (seeded)
- 1/4cup zucchinineat small dice
- 1/4cup garbonzo beanscanned
- 1/4cup white beanscanned
- 1/4cup green peas
- 3each bay leaves
- 1 cup fresh spinach leaves

Instructions
- First, Sweat the onions, carrots, celery in 2 tablespoons olive oil for about 7-10 minutes. Next add 3 tablespoons white wine and let it almost evaporate. Next add the garlic, 2 parsley stems, and bay leaves and sweat for 1 minute, then add 1 1/4 quarts cups water and simmer for 30 minutes.
- Once the stock is flavorful add the garbanzo beans, tomatoes, zucchini, squash, peas and fresh spinach. cook for about 5 minutes to soften and season with salt and pepper.
