Potato Croquettes
Ingredients
- 1pound potatoeschef potatoes or russet
- 1/4cup butter
- 2 each egg yolks
- 1/4 cup Parmesan cheese
- as needed Salt and pepper

- Peel potatoes and cut in half. In a pot on the stove top, place the potatoes in a 1 gallon of salted water and bring to a boil. Simmer for 15 to 20 minutes until the potatoes are just tender. Strain and mash with a potato ricer.
- Mix in the butter, egg yolks, Parmesan, salt and pepper. Prepare a standard breading station of flour, egg wash and bread crumbs.
- Shape the potatoes in small balls or square shapes. Dip the potato in flour, then egg wash and finally in bread crumbs. Heat a small pot of oil or deep fryer to 350 degrees and fry the potatoes just before serving them. Drain on paper towel and season with salt.
- Alternatively, you may bake the potatoes in a 425 degree oven until hot and browned.
