Ingredients
  • 2tablespoons vegetable oil
  • 2tablespoons onionschopped fine
  • 2cloves garlicminced
  • 1/2tablespoon all-purpose flour
  • 1cup roasted New Mexico Chilechopped. About 2 each.
  • 1/2cups chicken or beef stock
  • 2teaspoons saltor more to taste

Instructions
  1. Warm the oil in a heavy saucepan over medium heat. Add the onion and sauté until the onion is soft and translucent, about 7 minutes.
  2. Next add the green chilis and saute for another 5 minutes. Add the garlic and cook for about 1 minute, being careful not to burn the garlic.
  3. Next, stir in the flour and continue cooking for another 1 or 2 minutes.
  4. Add the stock, whisking as you go to work out any clumps. Add salt to taste and simmer for 10 minutes.
  5. Pour mixture into a food processor or blender and blend until smooth. season again if necessary.
