Ingredients
  • 8cups chicken stock
  • 2each chicken breastmedium dice
  • 11 1/2 inch piece fresh gingerpeeled, halved lengthwise
  • 6each garlic clovessliced
  • 1teaspoon white pepper
  • 1each star anise
  • 2ounces dried shitake mushroomshalved
  • 1/2tablespoon chicken baseif needed
  • 2tablespoons dark soy sauce
  • 1teaspoon MSG
  • 1teaspoon celery seed
  • 3teaspoons toasted sesame oil
  • 2each dried ramen
  • 3-4each baby bok choysliced in half (lengthwise)
  • 1cup c. snow peas
  • 2each scallionssliced
  • as needed saltto taste

Instructions
  1. Combine stock, chicken, ginger, star anise, garlic, MSG and celery seed in a large pot or Dutch oven. Bring to a boil. Reduce heat to low and simmer, covered, until chicken is cooked through, 20 minutes.
  2. Add mushrooms, soy sauce, and sesame oil and simmer, covered, until mushrooms are tender, 8 to 10 minutes.
  3. Add noodles, bok choy and snow peas, and cook, stirring occasionally, until beginning to soften, 2 minutes. Stir in scallions just before serving. Season with salt and white pepper. Serve. Don't overcook the noodles!!
