Ginger Garlic Chicken Ramen
Ingredients
- 8cups chicken stock
- 2each chicken breastmedium dice
- 11 1/2 inch piece fresh gingerpeeled, halved lengthwise
- 6each garlic clovessliced
- 1teaspoon white pepper
- 1each star anise
- 2ounces dried shitake mushroomshalved
- 1/2tablespoon chicken baseif needed
- 2tablespoons dark soy sauce
- 1teaspoon MSG
- 1teaspoon celery seed
- 3teaspoons toasted sesame oil
- 2each dried ramen
- 3-4each baby bok choysliced in half (lengthwise)
- 1cup c. snow peas
- 2each scallionssliced
- as needed saltto taste

Instructions
- Combine stock, chicken, ginger, star anise, garlic, MSG and celery seed in a large pot or Dutch oven. Bring to a boil. Reduce heat to low and simmer, covered, until chicken is cooked through, 20 minutes.
- Add mushrooms, soy sauce, and sesame oil and simmer, covered, until mushrooms are tender, 8 to 10 minutes.
- Add noodles, bok choy and snow peas, and cook, stirring occasionally, until beginning to soften, 2 minutes. Stir in scallions just before serving. Season with salt and white pepper. Serve. Don't overcook the noodles!!
