Cream of Mushroom
Ingredients
- 2tablespoons salted butter
- 1cup medium yellow onionchopped
- 2cloves garlicminced
- 1cup white button mushroomchopped
- 1cup cremini mushroomchopped
- 1cup shiitake mushroomchopped
- 1teaspoon salt
- 1teaspoon pepper
- 2tablespoons all-purpose flour
- 1/4cup white wine
- 4cups chicken stock
- 1/3cup heavy cream
- 2sprigs fresh thyme

- In a large saucepan over medium-high heat, melt the butter, then add the onion and saute until translucent, 3 minutes. Add the mushrooms, salt, and pepper and cook until they begin to turn golden brown, about 5-7 minutes.
- Add the garlic and stir, then cook for 1 more minute.
- Add the flour and stir to coat the mushrooms and onions, until combined.
- Add the white wine, stir, and cook until combined, about 1 minute.
- Add the chicken stock, stir, and simmer for 15 minutes.
- Add the heavy cream and stir to combine.
- Place the solids (mushrooms and onions, etc.) into a blender by scooping out with slotted spoon or straining. If straining DO NOT throw away the cooking liquid.
- Next pour a small amount of the cooking liquid (1 cup) into the blender and start to blend on high. Add more liquid gradually until you achieve a smooth and slightly thick consistency.
- Season with salt, pepper and fresh thyme and serve hot.
