Ingredients
  • 2tablespoons salted butter
  • 1cup medium yellow onionchopped
  • 2cloves garlicminced
  • 1cup white button mushroomchopped
  • 1cup cremini mushroomchopped
  • 1cup shiitake mushroomchopped
  • 1teaspoon salt
  • 1teaspoon pepper
  • 2tablespoons all-purpose flour
  • 1/4cup white wine
  • 4cups chicken stock
  • 1/3cup heavy cream
  • 2sprigs fresh thyme

Instructions
  1. In a large saucepan over medium-high heat, melt the butter, then add the onion and saute until translucent, 3 minutes. Add the mushrooms, salt, and pepper and cook until they begin to turn golden brown, about 5-7 minutes.
  2. Add the garlic and stir, then cook for 1 more minute.
  3. Add the flour and stir to coat the mushrooms and onions, until combined.
  4. Add the white wine, stir, and cook until combined, about 1 minute.
  5. Add the chicken stock, stir, and simmer for 15 minutes.
  6. Add the heavy cream and stir to combine.
  7. Place the solids (mushrooms and onions, etc.) into a blender by scooping out with slotted spoon or straining. If straining DO NOT throw away the cooking liquid.
  8. Next pour a small amount of the cooking liquid (1 cup) into the blender and start to blend on high. Add more liquid gradually until you achieve a smooth and slightly thick consistency.
  9. Season with salt, pepper and fresh thyme and serve hot.
