Dashi

Dashi is shredded dried bonito flakes. The flesh of the bonito tuna is dried and subsequently shaved to form very fine flakes. These flakes, when soaked in hot water, for the basic soup stock of Japanese cuisine. The combination of Dashi with kombu seaweed maximizes the umami flavor of the broth.
