Ingredients:
- 600 g Beef Sirloin, cut into 4 cm squares
- 100 g Massaman Curry Paste
- 1000 ml Coconut Milk
- 25 ml Fish Sauce
- 120 ml Tamarind Juice
- 100 g Palm Sugar
- 50 g Peanuts, Roasted
- 60 g Onions, Peeled and cut into 6 pieces
- 300 g Potatoes, boiled, peeled and cut into 2 cm squares
- 50 g Cinnamon Sticks, 3 cm
- 500 ml Water
Method:
- Place the beef in a pot, add coconut milk, roasted peanuts, cinnamon stick and water, cover and bring to a boil.
- Reduce the heat and simmer over low heat for 1 1/2- 2 hours.
- Allow the sauce to reduce and the beef to become very tender. Stir every 30 minutes.
- Add the massaman curry paste and cook for 5 minutes.
- Season with fish sauce, tamarind juice and palm sugar.
- Add onions and boiled potatoes, cook for 5 more minutes.
- Serve with jasmine rice, Indian naan or roti.
