Ingredients:
- 1 stalk lemongrass, trimmed and crushed
- 1-inch piece ginger
- 1 cup jasmine rice
- 2 cups water or stock
- 1/2 tablespoon salt, course
Method:
- Rinse the rice lightly a couple of times to remove excess starch.
- In a medium saucepan with a tight-fitting lid or cartouche (parchment paper), combine rice, water, salt, lemongrass and ginger and bring to just a boil.
- Stir once, cover, and reduce heat to low.
- Simmer for 18 minutes. (Do not lift the lid or stir!)
- Remove from heat and let stand, covered, for 5 minutes; fluff with a fork and serve.
