Jasmine Rice

Ingredients:
  • 1 stalk lemongrass, trimmed and crushed
  • 1-inch piece ginger
  • 1 cup jasmine rice
  • 2 cups water or stock
  • 1/2 tablespoon salt, course
Method:
  1. Rinse the rice lightly a couple of times to remove excess starch.
  2. In a medium saucepan with a tight-fitting lid or cartouche (parchment paper), combine rice, water, salt, lemongrass and ginger and bring to just a boil.
  3. Stir once, cover, and reduce heat to low.
  4. Simmer for 18 minutes. (Do not lift the lid or stir!)
  5. Remove from heat and let stand, covered, for 5 minutes; fluff with a fork and serve.
