Phyllo or Filo Dough

Filo is an unleavened dough used in both sweet and savory recipes. The dough is similar to strudel dough, in that it is very thin. Because of its delicacy, filo dries out very easily and quickly. It is important to keep a damp, but not wet, cloth on the dough that is not being used. Filo is often brushed with melted butter or oil on each layer. It can also be brushed on alternating layers or have breadcrumbs or nuts sprinkled between the layers to make them flakier.
