Appalachian-Style Sauerkraut
Ingredients
- 1 ea ham hock
- 3cups water
- 1/4 cup bacon drippings
- 1 1/2 cups yellow onion, sliced thin
- 1 1/2 cups hard apple cider
- 2cups drained fresh sauerkraut

- In a large sauce pot, add the ham hock and water and simmer for 20 minutes. Season.
- Meanwhile, in a large saute pan, heat bacon drippings and saute the onions until softened about 2 to 3 minutes.
- Scrape the onion into the pan with the water and ham hock.
- De glaze the pan with a little apple cider. add the deglazing liquid to the pan with the water and ham hock.
- Add sauerkraut and remaining apple cider to the pan with the water and ham hock and simmer for 30 minutes, until the sauerkraut is tender.
- Remove the ham hock from pan and let cool. Once cooled pick the meat from the ham hock
- Meanwhile, turn the heat on high and continue cooking sauerkraut until most of the liquid is evaporated. Be sure to leave enough liquid in the pan to keep the sauerkraut moist.
- Add the meat from the ham hock and hold for service.
