Ingredients
  • 1 ea mahi fillet
  • 1/2 tablespoon veg oil
  • 1 1/2tablespoons blackening spice

Instructions
  1. Heat a small cast iron skillet over medium heat.
  2. rub the fish with oil. sprinkle the presentation side of the fish heavily with blackening spice. Sear the fish, presentation side down, in the skillet with minimal oil until well blackened, about 1 to 2 minutes.
  3. Finish fish in 325 degree oven until done. (internal temperature reaches 145 degrees). Let rest and serve with salsa
