Chicken and Broccoli Penne
Ingredients
- 1/2cup broccoliflorets only, blanched and shocked
- 2ounces penneparcooked
- 1tablespoons olive oil blend
- 1teaspoon shallotminced
- 4ounces chicken breast bnls/sknlscut into small dice
- 1teaspoon garlicminced
- 1tablespoon dry white wine
- 1/8teaspoon oregano
- 4ounces Marinara Sauce
- 1teaspoon parsleyminced
- a/n coarse salt
- a/n black pepper

Instructions
- In a large skillet over medium-high heat, heat the olive oil.
- When hot, add the shallot and sauté until softened, 1 to 2 minutes.
- Add the chicken and sauté, stirring continuously until no longer pink.
- Add the garlic and saute a few moments, then add the white wine, oregano and tomato sauce.
- Add the broccoli and penne and sauté until thoroughly cooked.
- Season to taste with salt and pepper.
- Serve in a warmed pasta bowl and finish with chopped parsley and grated Parmesan.
