Ingredients
  • 1/2cup broccoliflorets only, blanched and shocked
  • 2ounces penneparcooked
  • 1tablespoons olive oil blend
  • 1teaspoon shallotminced
  • 4ounces chicken breast bnls/sknlscut into small dice
  • 1teaspoon garlicminced
  • 1tablespoon dry white wine
  • 1/8teaspoon oregano
  • 4ounces Marinara Sauce
  • 1teaspoon parsleyminced
  • a/n coarse salt
  • a/n black pepper

Instructions
  1. In a large skillet over medium-high heat, heat the olive oil.
  2. When hot, add the shallot and sauté until softened, 1 to 2 minutes.
  3. Add the chicken and sauté, stirring continuously until no longer pink.
  4. Add the garlic and saute a few moments, then add the white wine, oregano and tomato sauce.
  5. Add the broccoli and penne and sauté until thoroughly cooked.
  6. Season to taste with salt and pepper.
  7. Serve in a warmed pasta bowl and finish with chopped parsley and grated Parmesan.
