Chicken and Shrimp Stir Fry
Ingredients
- 2each chicken breastslice thin
- 1/2 pound shrimp 16-20ctpeeled and deveined
- 12each brown button mushroomshalved and sauteed until brown
- 8 oz broccoli florets or boc choyblanched
- 3tablespoons vegetable oil
- 3tablespoons gingerminced
- 2tablespoons garlicminced
- 1/4cup green onionssliced
- 1tablespoon cilantrominced
- 2tablespoons oyster sauce
- 1tablespoon soy sauce
- 2tablespoons chicken sotck
- 1/2 cup rice flour or cornstarch

- Bring 1 quart of salted water to a boil. When the water is boiling blanch the broccoli or bok choy for a minute or two until tender but still has some bite to it. Meanwhile in a wok or saute pan, saute mushrooms until well browned. season with salt and set aside.
- Place the shrimp and thinly sliced chicken in a stainless steel bowl. Pour the rice flour or cornstarch into the bowl and work into the chicken and shrimp.
- Next, combine the oyster sauce, soy sauce, chicken stock, cilantro and 2 teaspoons of cornstarch in a deli and set aside.
- In a wok or saute pan heat 2 tablespoons of oil over high heat. Next, sauteed the chicken and shrimp for 1-2 minutes until cooked half way. Take the chicken and shrimp out of the pan and add more oil if necessary. bring the heat down to medium and saute the ginger, garlic and green onions for 3-4 minutes. Be careful not to let the garlic or ginger burn.
- Next, add the sauce, mushrooms, broccoli, chicken and shrimp and turn the heat up to high. Let cook for another couple of minutes until the shrimp and chicken are cooked through.
- Pour stir fry onto appropriate plate and serve with rice.
