Chicken Broth
Ingredients
- 1each chickencut into 8 pieces
- 2each chicken feet
- 3quarts water
- 1medium carrotschopped large dice
- 2stalks celerychopped large dice
- 1small onionspeeled and quartered
- 2cloves garlicsmashed
- 6sprigs thyme

Instructions
- To a stockpot, add the chicken, chx feet, water, carrots and celery, onion, garlic; bring to just a boil.
- Reduce the heat and simmer for 60 minutes.
- Skim as needed.
- After 60 minutes, transfer the chicken to a plate and discard the skin.
- Strain the broth through a fine strainer and put strained liquid back into pot
- Pull the meat off the bones, cut or shred into 1 to 2-inch pieces and reserve
