Consommé
Ingredients
For the Clarification Mixture
- 8ounces chicken breast meatground
- 2ounces onionssmall dice
- 1 ounce celerysamll dice
- 1ounce carrotsmall dice
- 3ounces tomato concassé
- 2large egg whiteslightly beaten
For the Soup
- 1 1/2 quarts chicken stockor broth, cold
- 1/2each oignon brûlé
- 1each sachet d'epicesno cheesecloth, put directly in clarification

Instructions
- Combine the clarification mixture in a stockpot.
- Add the cold stock, oignon brûlé, and sachet d'epices to the mixture and mix well.
- Slowly bring the consommé to a simmer, stirring frequently until the clarification begins to form a mass, or raft.
- Once the raft forms, break a small hole in the raft to help you monitor the cooking.
- Baste the raft occasionally with the stock.
- Simmer gently until the stock is clear and flavorful, about 45 minutes.
- Without disturbing the raft, ladle the finished consommé into a cheesecloth-lined sieve.
- Degrease the consommé by skimming the surface. serve very hot
Recipe Notes
Variations:
- Beef Consommé: Use lean ground beef to replace the ground chicken in the clarification mixture. Use beef broth to replace the chicken stock.
- Fish Consommé: Use ground white-fleshed fish such as flounder to replace the ground chicken in the clarification mixture. Use a Fish Fumet to replace the chicken stock. For a very light color, you may replace the standard mirepoix with a White Mirepoix.
- Game Hen Consommé: Use ground game hen meat to replace the ground chicken in the clarification mixture. Use Brown Chicken Stock, made with roasted game hen bones (if available) instead of chicken bones, to replace the chicken stock.
