Ingredients
  • 1each seedless cucumberssliced very thin
  • 1/4each large red onionsliced very thin
  • 2tablespoons lemon juice
  • 1/2tablespoon whole grain mustard
  • 1/2tablespoon salt
  • 1/4cup champagne vinegar
  • 1/4cup cider vinegar
  • 1/4cup sugar
  • 1tablespoon fresh dill or mint
  • 4each chicken breast

Instructions
  1. Using a mandolin or knife, slice the cucumbers and red onion 1/16th inch thick (very thin!)
  2. Place the cucumbers in a colander and sprinkle with the salt. Using clean hands, toss to combine the cucumbers with the salt and allow to stand, for at least 15 minutes.
  3. Using clean hands, squeeze handfuls of cucumber slices to release any excess liquid and transfer to a medium stainless steel bowl.
  4. In another medium bowl, combine the white vinegar, cider vinegar, and sugar, lemon and mustard, and stir until the sugar is completely dissolved. Pour the vinegar mixture over the cucumbers and add the chopped dill or mint. Stir to thoroughly combine and serve, or refrigerate.
  5. Season chicken breast and grill. Serve with Cucumber Salad.
