Ingredients
  • 1pound potatoeschef potatoes or russet
  • 1/4cup butter
  • 2 each egg yolks
  • 1/4 cup Parmesan cheese
  • as needed Salt and pepper

Instructions
  1. Peel potatoes and cut in half. In a pot on the stove top, place the potatoes in a 1 gallon of salted water and bring to a boil. Simmer for 15 to 20 minutes until the potatoes are just tender. Strain and mash with a potato ricer.
  2. Mix in the butter, egg yolks, Parmesan, salt and pepper. Prepare a standard breading station of flour, egg wash and bread crumbs.
  3. Shape the potatoes in small balls or square shapes. Dip the potato in flour, then egg wash and finally in bread crumbs. Heat a small pot of oil or deep fryer to 350 degrees and fry the potatoes just before serving them. Drain on paper towel and season with salt.
  4. Alternatively, you may bake the potatoes in a 425 degree oven until hot and browned.
