Fasolatha
Ingredients
- 1cup white kidney beanscanned
- 1each onionchopped
- 1each carrotsliced
- 1each stalk celerychopped
- 1can diced tomatoes14.5 ounce
- 1tablespoon tomato paste
- 2teaspoons dried oregano
- 2teaspoons dried thyme
- 3cloves garlicchopped
- 1tablespoon olive oil
- 3cups chicken stockor vegetable stock
- 3tablespoons fresh parsleychopped
- saltto taste
- ground black pepperto taste

Instructions
- Rinse and strain beans. Place in a large saucepan, and cover with water. Boil for 2 to 3 minutes. Drain, discarding the water.
- Cover the beans with 3 cups chicken stock, and bring to a boil. Add onions, carrots, celery, tomatoes, tomato paste, oregano, thyme, garlic, olive oil, and salt and pepper. Cover and simmer for an hour., until the flavors develop. Mix the parsley and adjust seasoning as necessary.
- If using a pressure cooker, cook all ingredients except parsley for 3 to 4 minutes under 15 pounds pressure. Stir in parsley.
