Ingredients
  • 1each russet potatoe
  • a/n coarse salt

Instructions
  1. Peel, rinse and dry the potatoes. (You may leave the skin on if you prefer)
  2. Cut each potato lengthwise into 4 or 5 slices 1/4 inch thick, then cut each piece into sticks 1/4 inch thick.
  3. Heat oil to 275˚F.
  4. Fry the potatoes about 4 to 5 minutes until soft.
  5. They should not be brown at all at this point.
  6. Drain them on paper towels.
  7. Once the potatoes have been fried at 275˚ F, turn up the heat until the oil temperature reaches 375˚F.
  8. Fry the potatoes until golden brown, remove drain and season with salt.
  9. Serve immediately.
