Ingredients
Simple Syrup
  • 31grams sugar
  • 37mL water
  • 20grams corn syrup
  • 45grams cocoa powder
  • 13grams vegetable oil
  • 12grams vegetable shortening
  • 40grams corn syrup
  • 112grams buttersoftened
  • 1teaspoons vanilla extract
  • 450grams confectioners sugar
  • 2tablespoons cold waterto 6 tablespoons, to adjust consistency

Instructions
  1. In a small pot on the stove, combine the first 3 ingredients to make the simple syrup.
  2. Boil for about 2-3 minutes then pour into a bowl and allow to sit in the freezer to rapid cool while you gather the other ingredients.
  3. In a large mixing bowl, add the cocoa powder and warm simple syrup and mix until it forms the fudge base.
  4. Add the vegetable oil and vegetable shortening and mix well.
  5. Add the corn syrup and the softened butter, mix smooth.
  6. Add the sifted confectioners sugar all at once and mix until smooth.
  7. Slowly add some of the cold water about 1 tablespoon at a time until you reach the desired consistency.
