Garam Masala
Ingredients
- 3tablespoons coriander seeds
- 3tablespoon cumin seeds
- 11-inch-piece cinnamon stickcrushed
- 8each cloves
- 4each black cardamom pods
- 1/ 2teaspoon fenugreek seedsoptional
- 2tablespoon black peppercorns
- 2each bay leaves

Instructions
- Place a frying pan over medium heat.
- Add the spices and dry fry for about 30 seconds.
- Be sure to move the spices around in the pan so that they roast evenly.
- Remove from the heat and grind to a fine powder in a spice grinder or mortar and pestle.
