  • 2 1/2pounds butter

  1. Bring butter to a boil in a 2-quart heavy saucepan over moderate heat.
  2. Once foam completely covers butter, reduce heat to very low.
  3. Continue to cook butter, skimming the white foam on top and allowing the milky white solids fall to bottom of pan, about 4-6 minutes.
  4. Continue to on low hear, skimming the top as necessary.
  5. Once all the white foam is removed from the surface and the butter is melted let the remaining milk solids fall to the bottom of the pan. take off heat and let sit for a few minutes.
  6. Next, pour the butter fat into a large saute pan without letting the milk solids from the bottom get into the saute pan. Then turn the heat on high and allow the water to evaporate out of the butter fat. Be careful not to let the butter get too brown as there it will carry over.
