Key Lime Pie Ice Cream
Ingredients
Graham Cracker Chunks
- 3/4cup graham cracker crumbs
- 1/4cup brown sugar
- 1/4cup melted butter
Key LIme Base
- 2tablespoons dark rum
- 6each egg yolks
- 1/4cup key lime juice
- 1cup heavy cream
- 1 3/4cup milk
- 1 cup sugar
- 1teaspoon lime zest
- 1/4teaspoon vanilla
- pinch salt

Graham Craker Crumbs
- Mix crumbs, brown sugar and melted butter together. place on a baking sheet and bake at 325 degrees for 10 minutes. let cool.
Key Lime Base
- Mix all ingredients (except the graham cracker crumbs) together in a mixing bowl. place bowl over a double boiler and cook custard until reaching 180 degrees and the mixture has thickened.
- Once the mixture has thickened, take off heat to cool.
- Before spinning the base stir in 1/4 cup of the graham cracker crumbs. Reserve the other half to top the ice cream.
- Spin the ice cream for about 15 to 20 minutes. make sure not to pour over a quart of base into the ice cream bowl/machine.
