Ingredients
  • 2tablespoons butter
  • 2tablespooons Finely-chopped onion
  • 1 teaspoons Finely-chopped garlic
  • 2 tablespoons Finely-chopped scallions
  • 2tablespoons Finely-chopped boiled ham
  • 2tablespoons Finely-chopped mushrooms
  • 1 1/2tablespoons all-purpose flour
  • 1tablespoon Worcestershire sauce
  • 1cup veal stock
  • 1/4cup Red Wine
  • 1 teaspoon thyme leaves
  • 1 bay leaf
  • 2tablespoons finely chopped fresh parsley
  • Salt - to taste
  • Freshly-ground black pepper - to taste

Instructions
  1. Melt the butter in a small (heavy bottom) sauce pot and saute the onion, garlic, scallions and ham for 5 minutes, being careful not to burn the garlic or onions. Add the mushrooms and wine and reduce the heat to medium and cook for for 5 minutes.
  2. Blend in the flour and cook, stirring for 4 minutes, then add the Worcestershire sauce, veal stock, thyme and bay leaf. Simmer until the sauce thickens, about 1 hour.
  3. Before serving, remove the bay leaf and add the parsley. Season with salt and pepper to taste.
