Marchand De Vin
Ingredients
- 2tablespoons butter
- 2tablespooons Finely-chopped onion
- 1 teaspoons Finely-chopped garlic
- 2 tablespoons Finely-chopped scallions
- 2tablespoons Finely-chopped boiled ham
- 2tablespoons Finely-chopped mushrooms
- 1 1/2tablespoons all-purpose flour
- 1tablespoon Worcestershire sauce
- 1cup veal stock
- 1/4cup Red Wine
- 1 teaspoon thyme leaves
- 1 bay leaf
- 2tablespoons finely chopped fresh parsley
- Salt - to taste
- Freshly-ground black pepper - to taste

Instructions
- Melt the butter in a small (heavy bottom) sauce pot and saute the onion, garlic, scallions and ham for 5 minutes, being careful not to burn the garlic or onions. Add the mushrooms and wine and reduce the heat to medium and cook for for 5 minutes.
- Blend in the flour and cook, stirring for 4 minutes, then add the Worcestershire sauce, veal stock, thyme and bay leaf. Simmer until the sauce thickens, about 1 hour.
- Before serving, remove the bay leaf and add the parsley. Season with salt and pepper to taste.
